Catch Michelin-Starred Chef Frédérik Bizat at Brasserie Flo until Jan 16

The Beijing weather has been treating us pretty well recently, but it's still not a patch on a bit of French winter sun. Thanks to Brasserie Flo you can at least treat your palate to a bit of sunny French cuisine as they are bringing in Chef Frédérik Bizat from the aptly-named one Michelin-starred hotel-restaurant Les Trois Soleils de Montal.

Located in the town of Saint-Céré in the Midi-Pyrénées region of France, the cuisine at Les Trois Soleils de Montal is driven by Chef Bizat's use of hand-selected, seasonal produce. Surprisingly for a french provincial chef, his cuisine is also very much inspired by Asian flavors and techniques (the chef even described our menu-free lunch as "omakase" style).

As a result, the scallop carpaccio above was enhanced with ginger, kaffir lime juice, and Thai basil, while a dish of caramelized foie gras was served with a sauce of white miso (see main blog images). This is certainly a pleasant twist on standard French fine dining and one that we would be happy to see other restaurants adopt. Chef Bizat is also considered to be an expert in the use of the sous vide cooking method, which was employed to good effect on a piece of Australian tenderloin (see main blog images).

Chef Bizat will be serving lunch and dinner at Brasserie Flo until Jan 16. There are two price options for dinner, a five-course menu at RMB 698, or a six-course menu at RMB 888 (RMB 1,286 including wine pairing). The dishes we tried above are part of the RMB 888 menu.
