In Pictures: Heritage Delights With New Chef and New Menu
Anyone associated with the great Jean-Georges Vongerichten (he of the three Michelin stars and global restaurant empire) has a lot to live up to in the kitchen department. Luckily Heritage's new chef, Gilbert Wolfarth, who joins the Sofitel's culinary team following a stint at Lagoon by Jean-Georges at the St Regis Bora Bora, has the culinary chops to deliver.
Mr. Wolfarth has revamped Heritage's menu, aiming for a blend of tradition and modernity that comes through in dishes such as the re-imagined "burgundy snails". The menu is undoubtedly pricey, but you can get a more accessible taste with the set lunch menu (two courses RMB 300, three courses RMB 380), which includes many of the a la carte dishes.
I sampled the eight course Magnifique Gourmet Experience tasting menu (RMB 1,000 per person, minimum of two guests), which offers a glance at the best of the new menu. Highlights included a peanut-crusted wild black cod fillet (RMB 300 a la carte), surrounded by a brown butter broth so moreish it took every ounce of my willpower not to pick up the serving jug and drink from it, and a hunk of foie gras a la Grenobloise (RMB 220 a la carte), with fried capers, parsley, and confit lemon and lime.
