Vegetarians, beware...

I really like Vietnamese food. Pho La La gets Vietnamese food. That being said, I would love to visit the place as much as I could because it's very affordable but there's something that I will never understand. You will find in their menu a note for vegetarians (both in Mandarin and Chinese) that they will make your noodles soup vegetarian - they will substitute meat with mushrooms and tofu. Cool! But if you ask them about the broth, well, that won't be vegetarian - you have either beef or some other meat stock to choose from. So my question here is - how can you say you make vegetarian soups if you use meat stock for them? Common sense? Marketing tricks? Call it whatever you want to, but I'm not falling for it.
