Aye Papi! Peruvian Favorite Drops Potent New Cocktails in Xinyuanli

Not content with just serving up innovative, interesting and reasonably priced Peruvian fusion food, Xinyuanli restaurant Pachapapi is becoming one of Beijing's hottest nightlife destinations thanks to its authenticly flavorful piscos and other Latin drinks. And now, as part of their mission to "show the world that Peru is more than just llamas", co-owner Francisco Chia and his team have released a new range of Pacha cocktails, which are accompanied by fun tasting notes, and quasi-mythological origin stories which drop plenty of Peruvian cultural knowledge. 

The 16-drink range was designed by Alexander Holender, executive bartender of El Infusionista Bar, and La Cachina bar in Lima, Peru. He took a break from managing two of the country's top bars to swing by Beijing and produce a menu that combines both Peruvian and Chinese ingredients in some truly unique concoctions that look as good as they taste.

Our favorites: the bright, clarifying rum based Charapita (RMB 68). It's made with golden berries, fresh lime juice and chili flakes and made its debut at our Hot & Spicy Festival last month. The spice level can be ramped up if desired with a few drops of ultra-fiery chili-infused vodka, though we don't recommend going overboard as the flavor can easily be overwhelmed and you'll end up feeling like you're just drinking cold chili.

The Alpa-Chino (RMB 68) brings together Peruvian and Chinese cultures both with its cute name (alpacas, geddit?) and the inspired mix of baijiu and pisco. Lemongrass puree and lime juice tie it all together to make a drink that is sweet but has surprisingly deep notes and warmth. Another surprise hit: the baijiu-based El Brujo (RMB 78), a pretty pink number garnished with fresh strawberry slices and mint leaves which punches well above its weight thanks to the perfectly balanced Chinese liquor and blood orange mixer.

Finally, in what is perhaps their signature drink, Cholo Power (RMB 78, pictured in lead image above, and below) is one of the strongest on the menu, with three standard measures of rum, plus pineapple syrup, fruit, and honey flavors that are guaranteed to knock you out.

Pachapapi is also offering happy hour prices every day until 8pm. We recommend bagging a spot at the bar so that you can check out their array of infusions, purees, mixers, aromatics, herbs, dehydrated garnishes, and even bitters all of which are made in house by the team.

Despite claiming "we aren't a cocktail bar", with these prices, and this level of dedication, Pachapapi frankly puts many of Beijing's other over-hyped and overpriced bars to shame.
