Dr. Green Serves Up Salad for Math Nerds at Sanlitun Soho
The salad scene in Beijing is getting serious. After Salad University, which evokes grade school memories with its lunchtime study hall vibe, we're now cutting class because new Sanlitun Soho salad bar Dr. Green called us in for a checkup.
Nestled on the quiet fifth floor of the otherwise bustling Sanlitun Soho, Dr. Green is as simple as they come, featuring a counter where you order and a small seating area. Instead of the "pick and mix" approach which has become so trendy, this doctor instead prescribes over a dozen set salads (RMB 39-69) with health-inspiring descriptors such as “energy boost,” “beauty infusion,” “protein bank,” or “nutrient expert.”

Math nerds will be doubly excited with a visit to Dr. Green; that's because all of the salads are named using mathematical symbols. The √2 (RMB 39), for example, is a combination of asparagus, cashews, quinoa, corn, chicken, and mixed greens, while the π salad (RMB 59) features dragon fruit, boiled egg, mushroom, broccoli, tuna, arugula, and lettuce. Other options include ∞, Ω, X³, and Σ. Looks like Salad University isn't the only healthy eating joint that's trying to school us.
There are also a bunch of homemade sauces to balance out all the veggies, including Dijon vinaigrette, sesame dressing, thousand island sauce, Tuscany-style dressing, plum dressing, mango chili, and "special" Japanese sauce. Add extra ingredients for RMB 5-18. Besides salads, there are also juices and meal supplements for you to choose from.
If you don’t believe that these salads will lure nerds, then you'll be shocked to know that during our visit we were serenaded by the feverish discussion between two IT professionals about AI and spaceships before bragging about their academic achievements at college. We felt smart just eavesdropping.
For that reason, we'd like to thank Dr. Green for reminding us about the joys of education, as well as the need for healthy lunchtime options.
