With top-notch service and fantastic views of the old city gates, Capital M is a great spot for a classy evening out. We went on Valentine's Day where there was brisk business and a very delectable set menu that was highlighted by salmon cooked in pastry and suckling pig with a delicious sauce that I believe was flavored with morels. The desserts were first-class as well, and all in all it was an evening to remember. Service levels -- from the waiters right through to the bathroom attendant, are tops for Beijing.
Perhaps the most amazing part of it is that despite being located essentially in a half-construction pit, half-parking lot, the Capital M dining room is one of the finest in the city. At night the old city gates at the southern end of Tiananmen are framed in the dining room windows.
Some kinks are being still worked out -- for one, the glassed-in faux fireplaces in the dining room (a nice touch for a cold evening) kept going out and there was a pronounced smell of renovation chemicals that I can only assume was coming from other floors. Perhaps most irritating was the fact that there isn't real separation between the bar area (which allows smoking) and the dining area (which doesn't) -- which means that seating in the side of the dining area closest to the bar isn't really smoke-free (and the bar can get noisy at times).
