The Sartorial Burger

Let's Burger, its walls decorated with Cecil-Beaton-chic B&W photos, is Let's Seafood's laid-back artsy bro who likes "upcycling" and Swedish twee bands. But as with many tastemakers we love to hate (Dov Charney, Mary-Kate Olson, Bach), Let's Burger makes some exceedingly good things.

Their burgers and fries are amazing, but I'm always drawn to the abounding transfaturated sauces and mayos. From Rémoulade to Curry Mayo to vaguely-reminiscent-of-In-n-Out-Secret-Sauce, they've got garnishes covered. Now all this is great, but I've tasted the forbidden fruit. Of course I'm speaking of Let's Seafood's incredible pestos. I understand why the two very esoterically different dips are kept separate, for the sake of cuisine-appropriateness and lack of "overdoing it"...but goddammit, those pestos are good! Why not introduce pesto to the Let's Burger counters?

Downsides: the burgers are a bit pricey, and be prepared for some styles to fall apart in your hands. It's a juicy sacrifice worth making.

You're probably bound to succeed at satiating your taste buds with any of the delicious and diverse burger choices on the menu, but the Parisian burger is delightful--a healthy serving o' meat with relish and beets and plenty of great vegetables. For a more-than-healthy serving of cow, try the steak burger. It's to die for.

My two cents?
-Develop a wider range of vegetarian options. There is such a market for this.
-PESTO, PLZ!

PS: The service is pretty impeccable. Not sure if the super-nice-super-attentive guy with an earring and savvy style serving/overseeing things is the owner or not, but he totally rocks.
