From now on to May 31st, Zijin Mansion exclusively presents a selection of Hakka signature delicacies crafted by Head Chef James Wang. Using top quality ingredients prepared with traditional cooking techniques, the Hakka delicacies, which is seemingly undecorated, feature textured flavors that are bound to make Beijing diners fall for them. Zijin Mansion is a one Michelin-starred restaurant in “Beijing Michelin Guide 2021”. With orange being the main tone for the traditional Chinese-style decoration, the restaurant embodies the classic elegance in eastern culture and is thus dedicated to creating Cantonese cuisines. Head Chef James Wang was born in Mei Zhou, Guangdong province and has been specializing in Cantonese cuisines for over 20 years with continuous inspirations coming from the idea of “spring sprouts, summer breezes, autumn leaves and winter snows”, which enables him to deliver the most authentic Chinese flavors to diners’ taste buds. Born and raised as a Hakka, Chef Wang is versed in Hakka culinary customs, which makes possible a selection of classic Hakka delicacies including Salt Baked Chicken with Sand Ginger, Stewed Goose Feet in Hakka Style, Braised Tofu, Chili, Bitter Gourd and Minced Pork with Bean Sauce, Stewed Goose in Spices Soy Sauce, Homemade Flour Noodles with Minced Pork in Hakka Style and Sweet Green Rice Ball with Peanut and Sesame Chips. The unique flavor of Hakka cuisine makes it become one of the three well-known regional cuisines in Cantonese-style. It pursues freshness in ingredients and richness in taste while deliberately stressing a touch of simplicity and nature when it comes to presentation. Cooking techniques such as stewing, baking, simmering and braising are mainly adopted to craft seemingly undecorated yet flavorful Hakka delicacies, in which great proficiency and attention to details are required. Ingredients like preserved vegetables, Chinese mugwort and dried tofu are all sourced from the place of origin in Mei Zhou, thus enabling truly authentic Hakka flavors.
