Owing its existence to footloose Beijingers who fell in love with the picturesque town of Lijiang, Yunnan, Sandie Shui is dedicated to Lijiang pork spareribs hot pot, a specialty of the Naxi people. The rich base broth arrives brimming with tomatoes, potatoes, celery, mint and more than a dozen chunks of tender, surprisingly lean spare ribs. Unless you are ravenous, you won’t need additional ribs since you’ll want to save room for the fantastic luoguo fan, a bronze urn of rice steamed with lightly fried potatoes. The homemade rice wine is sweet and stronger than similar brews, and the selection of Yunnan alcohols go beyond baijiu to Dali green plum wine – an excellent finish to the meal.
