Hai Wan Ju 海碗居

Makes some of Beijing’s best zhajiang mian, or hand-pulled noodles mixed with shredded vegetables and dressed in a dark bean sauce. There are two types of noodles sold here: guoshui, rinsed in cool water; and guotiao, straight out of the pot. In the summer, many people order their noodles rinsed to cool them off, while guotiao are ideal for cold winter days. The simple decor and boisterous staff harkens to a lao Beijing nostalgia theme.
