EAT: La Rosée Opens in Xidan, Bonne Maman Sandrine at Flo Bistronome, Michelin Chef Week at Cepe
Recently opened in Xidan Joy City, La Rosée, a new restaurant concept from Groupe FLO Asia, serves a fascinating selection of dishes influenced by global cuisines, all with a French accent. The name La Rosée translates as “dew” in English and much as dew is a familiar sight on every continent, the chefs at La Rosée have scanned the globe in pursuit of new flavors and styles, bringing them together to create innovative new dishes.
What this means in practice is a series of dishes that riff playfully off of French classics, such as beef fillet and foie gras kebabs, a take on the classic dish steak rossini, or pork meatball with miso butter escargot.
Sticking with news from Groupe Flo, Provençal chef Sandrine Delabrière will be cooking at Flo Bistronome from April 19-22. Born and raised in Marseille, France, Sandrine has been cooking from a young age, learning recipes from her great-grandmothers, grandmothers, and parents. As soon as she could write, she kept notebooks recording her favorite food experiences, recipes and tips she gathered from friends, family, and chefs. She traveled extensively through Italy, Spain, North Africa, and later lived in the Middle East. All of this enhanced her love for the Mediterranean cuisine, its creativity, generosity, rich fragrances, and flavors.
In other guest chef-related news, from April 10-13, Italian restaurant Cepe at Ritz-Carlton Beijing, Financial Street will welcome Michelin-starred chef Roy Salomon Carceres into the kitchen. Born in Bogota, Columbia, Roy moved to Rome when he was 16 and fell in love with Italian cuisine. In 2011, he opened restaurant Metamorfosi in Rome, winning a Michelin star just six months later. During his stop at Cepe, Beijing diners can experience several of Metamorfosi restaurant's signature dishes, such as “Rigatoni Pasta, Red Spanish Prawns, Buffalo Mozzarella, Candied Tomato” and “Amberjack, Colombian “Ceviche”, Litchis Foam, Celery.” Lunch is priced from RMB 588 per person for four courses and dinner is priced from RMB 788 per person for five courses (larger menus and wine pairings available for an extra charge).
Flavorful Greek cuisine is perfect for the warmer weather we're having and Kerry Hotel are clearly onto this fact too, as they are holding a Greek gastronomy festival from Apr 13-18. Helmed by Guest Chef Panagiotis Sotiropoulos from Greece, diners can expect popular dishes such as kagianas (Greek traditional omelet), bouyiourdi (baked feta with tomatoes), bougatsa (Greek custard pie with phyllo), and kourabiedes (Greek butter cookies). To complete the Greek experience, there will also be musicians and dancers performing Greek folk dances such as Kalamatianos, Syrtos, and Syrtaki. The Greek-themed buffet dinner costs RMB 338 per person, while the Sunday brunch costs RMB 418 per person.
