Bruno’s Brunch: JW Marriott Chef Bruno Correa
It’s tough enough being the executive chef of a single restaurant. If you’re employed by a hotel, you might even be overseeing three or four kitchens. But what if you’re executive chef for two hotels? Bruno Correa is just that man, running all things food at both Ritz-Carlton Beijing and the JW Marriott, where he recently helped launch CRU Steakhouse’s new “Grand CRU” brunch.
What makes the new CRU brunch great?
The selection of high quality and unique products – and the great guests we have. It ’s about luxury, quality and relaxed ambiance.
The format of the CRU brunch combines a la carte and buffet. Why have you chosen to do it this way?
This is an upscale brunch, and we want to serve the best. To do so, you can’t have warm food on a buffet, as quality won’t be great. We prefer to prepare the warm dishes a la minute for our clients.
Brunch has become a massive phenomenon. But do you think other portmanteau meal concepts would take off?
Linner? Dunch? Not too sure about these two. Afternoon tea can be very popular, and some people could take that as “linner” or “dunch.”
What are the essential elements of brunch?
Eggs, pasta, bakery items, protein … basically breakfast dishes at lunch. But it’s best to start early!
What’s an atypical brunch food that you think would be a great addition?
Lobster Benedict! Or caviar scrambled eggs!
Eggs. How do you like them?
Soft, warm and juicy!
How much champagne should one consume at brunch?
Really depends on the body mass, but my guideline would be to stop when you feel slightly high but not intoxicated. You don’t want to destroy the fun!
Best thing to do after a big brunch?
Some outdoor activities could be a good choice – or just enjoying the sun in your backyard.
What’s better and why: breakfast in bed, or brunch?
Breakfast in bed sounds good, but it’s not practical. It’s actually very uncomfortable (at least for one). With brunch, you won’t have to change the bed sheets!
