Best salads?
Looking for places where I can get a variety of interesting, reasonably priced dinner salads. Preferably something with more variety than a chicken caesar, etc. -- though if someone knows where you can get a good one without waterlogged lettuce, that would be nice too.

The saddle and Rickshaw both have interesting tex mex style salads that are definitely tasty and filling.
TGI fridays in the USA had a bunch of them, I'm not sure about the one here.. I would assume they do as well.

There is a new Greek cafe in Solana basement which has FABulous salads. The feta cheese in it is to die for!
Plus the other food is pretty darn good too- and cheap!

饭前饭后 behind 南新仓大厦 at 东四十条 does a nice salad. It's a trendy taiwanese place so there's lots of other interesting things on the menu.

Cafe Parma has the best salads in Beijing
Try the cured ham, watermelon and fresh mozzarella........beautiful
Also Italian olive and bread with roasted peppers is great

There is a small Sandwich/Salad place behind Sun City called ClubSandwich, next to the Golden Pineapple Youth Hostel. They do up a bunch of really solid salads and tasty sandwiches. Only been open for about a month

There is a place next to Assagi in Sanlitun which just opened a branch in the new Sanlitun village. They do a nice variety of salads and sandwiches. The bread is excellent and everything is super fresh

If you are not looking for a high-end place, I concur with the Cobb Salad at American Cafe, and would add the Chef's Salad at The Den.

Thanks for all the suggestions -- these sound great! I've been wanting to check out Solana and the Village at SLT, so this gives me a good reason to do so. Will try to venture out to some of the other places, too.

PS: Splurged on Sunday brunch at the Orchard a couple of weeks ago -- wonderful salads, along with everything else (which I ate more than I should have, sort of defeating the original purpose of looking for a good salad place... )
