CNY Chef: Grilled Miso Wagyu Rib-eye From Chef Hunter Ren of Beyond Yakitori

I don’t know about you, but I’m definitely not traveling around this Chinese New Year, I’m staying put right here in Beijing! But here’s the problem: There are only so many Netflix shows I can watch before I turn into a couch potato. So, throughout Chinese New Year we’ll be sharing food and drink recipes from beloved restaurants and bars all over Beijing.

Beyond Yakitori

Recently, Beyond Yakitori has really gone beyond just grilling up delicious yakitori. They’ve now got a menu filled with hot tapas and recommended dishes for the table to share. Among their latest additions is a grilled Wagyu rib-eye marinated in a simple miso sauce that melts in your mouth and kicks you in the balls with its umami flavor!

You know how sometimes you have a huge meal but there’s one dish that stands out and you go out of your mind for it for days after? For me, this dish was it.

Lucky for all of us, Chef Hunter Ren has spilled his secrets! I was surprised how shockingly easy and fast the recipe is to make.

Grilled Miso Wagyu Ribeye

Ingredients

60g sake
12g soy sauce
40g sugar
200g miso paste
1-2 Ribeye steaks (thickness based on personal preference)

Method

1. Combine the sake and sugar in a pot over the stove to burn off the alcohol content of the sake. The alcohol in your pot will catch on fire, so be careful not to burn off your eyebrows! Let the mixture burn until the alcohol content is gone and the flames die out.

2. Put the mixture over a bed of ice and stir until it cools down.

3. Combine the mixture and the soy sauce with the sake paste and mix well until the paste is a smooth texture.

4. Brush your marinade onto both sides of your rib-eye steaks.

5. Wrap your steaks in plastic wrap and put them in the fridge for 2.5 to 3 hours.

6. Take out your steaks and you’re ready to grill.
