Size Matters for Tube Station, One of Beijing's Largest Home-Grown Pizza Chains
In the run-up to the Beijinger's 2015 Pizza Cup Launch Party October 17-18, we are profiling some of the best pies in Beijing so that you, our faithful readers, can try as many as possible before we ask you to make your choice for the best. Today we take a look at Tube Station, one of the 19 vendors that will be selling their wares at our two-day pizza festival this weekend at Galaxy Soho. Here's what Victoria Yang, media and events manager for Tube Station, had to say:
What's your style/pizza philosophy?
My boss went to New York so many times – he loves the pizza there. So he was determined to make authentic New York style pizza in China. Our main ingredients, like the cheese, and parts of the sauces, are imported. The other ingredients come from the best-qualified and trusted suppliers in China. We want our customers to feel relaxed and be happy in our restaurants, especially families with kids. In order to do that, we provide paper and crayons for everyone, so that they can draw. Some of our restaurants, like the one in 3.3 Mall and the Lido branch, have huge kids' areas as well. Also, the price of our pizza is very affordable. We'd like to create a pizza culture in China that will allow it to be the daily choice for Chinese people, informing them that Tube Station is tasty, authentic, friendly, and affordable.
In a market crowded with over 100 different pizza shops, what do you do to stand out?
Our pizza is the biggest in Beijing – 32-inches. It's not only tasty but also good value.
What would you say your style is (Neapolitan, New York style, Sicilian, Chicago style, Roman, Californian ...?)
New York style: thinner crust, more cheese and other ingredients.
Thick vs Thin: What's your take?
Thin. It's lighter and people can taste more of the ingredients. My boss is a meat-eater and he doesn't like thick crusts. Personally, I think that if the crust is too thick, it's like eating a steamed bun.
What's the secret to your sauce?
So secret that I can't tell.
What kind(s) of cheese do you use and why?
Mozzarella cheese. Coz it's classy.
